Zucchini Ravioli with Basil Cashew Ricotta

 

An Italian classic with a healthy twist! I made the zucchini ravioli noodles a few days ago, and we were well impressed by this new creation!

If you are as immersed in the food world as I am, you’ve probably heard of the word zoodle before. In case that sounds totally alien to you, zoodles are noodles made out of zucchini. Though these days zoodles can be made from any veggie that can be spiralized into ribbons or spaghetti-like strands.

Next to zucchini, red beet, sweet potato, carrot, and butternut have become quite a famous substitute to pasta, especially amongst the gluten- or grain-free eaters.

They’re actually pretty good, we even think that they are better than normal pasta! But then we are huge veggie munchers of course.

So after swapping spaghetti for spiralized zucchini, sweet potato or butternut, zucchini ravioli was the next step….. and a definite hit if you ask my hubby and me.

Another healthy food hack successfully made it out of the kitchen!

 

Ingredients (serves 2)

 

For the cashew ricotta

  • ½ cup raw unsalted cashew nuts
  • 1 tbsp. apple cider vinegar
  • 1 tbsp. nutritional yeast
  • 1 clove of garlic, minced
  • ½ cup fresh basil leaves
  • Salt and pepper to taste

For the tomato sauce

  • 3 cups tomato, chopped
  • ½ cup onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup water
  • Salt and pepper to taste

For the ravioli

  • 2 zucchini
  • 1.5 cup mushrooms or minced beef, finely chopped
  • ½ – 1 cup grated mozzarella cheese
  • Salt and pepper to taste

FYI: we made half of the ravioli’s with mushrooms (for me) and half of them with meat (for my hubby).

 

Directions

 

1.Soak cashew for at least 1 hour in water, overnight is best. Longer soaking times will give you a smoother ricotta. When soaking overnight, place them in the fridge during the warmer months.

2. Preheat oven to 375°F or 190°C. Grease a large baking dish with cooking oil.

3. In a skillet, heat cooking oil over medium heat.

4. Sauté onion and garlic for 2 to 3 minutes while stirring. Add tomatoes and water and cook until sauce-like substance. This will take about 10 minutes. Season with salt and pepper to taste.

5. In another skillet, Heat cooking oil over medium heat, brown mushrooms or minced beef for a few minutes while stirring. Season with salt and pepper to taste.

6. When the tomatoes and beef or mushrooms are ready, allow to cool slightly.

7. Meanwhile, make the ricotta filling: Combine all cashew ricotta ingredients in a blender and process until smooth. Season with salt and pepper to taste.

8. When the mushrooms or minced meat have slightly cooled down, mix with the cashew ricotta cheese.

9. To assemble the ravioli: cut zucchini into thin, thick strips.

10. Lay 2-3 strips of zucchini noodles so that they overlap lengthwise. Lay two to three more noodles on top, so the form a big “T”.

11. Spoon mushroom/beef-ricotta filling on the end bit of the “T”.

12. Roll all the way up to the upper part of the “T” shape, then fold 2 remaining sides over the center.

13. Turn the ravioli over and place in the baking dish seam side (or folded side) down.

FYI: the pictures are taken with a different filling, cause while I was writing down this recipe, I realized that the explanation might need some visual material to bring the ravioli to a successful end! Luckily I had some zucchini and a leftover bulgur salad in the fridge to show you how it is done.

14. Pour tomato sauce around and over the zucchini ravioli, sprinkle with grated mozzarella cheese and bake in the oven until the zucchini noodles are “al dente” and the cheese is melted and browned on top. This will take about 20 to 30 minutes.

15. Optional: top with more fresh basil and/or parmesan cheese before serving
