Raw Vegan Coconut Oreo Cookies Covered in Dark Chocolate

 

When Oreo cookies meet Bounty bars. A match made in heaven. To be honest this may be the best raw vegan dessert/snack I have ever made. As you know I’m not a 100 percent vegan, but I love vegan recipes, especially the sweet ones like this!

If you are a sweet tooth too I’m sure you’ll love these. Though they work without the chocolate sauce cover chocolate make everything better, right! Up to you!

Ingredients

For the cookies

  • 1 1/3 cup unsalted almonds (or any other nut or a nut mix of your liking)
  • 3/4 cup Medjool dates, pitted
  • 1/4 cup dried goji berries
  • 3-4 tablespoons raw cacao powder
  • Sea salt to taste
  • 1-3 tablespoons water

For the coconut vanilla creme

  • 1 cup desiccated coconut
  • 2 tablespoons melted extra virgin coconut oil
  • Vanilla extract to taste
  • Unsweetened coconut milk until desired consistency

For the dark chocolate cover

 

Directions

For the cookies

  1. Blend unsalted almonds in a high-speed blender until powder-like texture. Add other cookie ingredients and blend until homogenous. Add water as needed until the mixture comes together and forms a cookie dough ball.
  2. Roll the cookie dough between 2 sheets of parchment/baking paper until desired cookie height. Use a cookie cutter to cut little rounds. No cookie cutter? I don’t have one either so I used the top of a cocktail mixer. Be creative with what you have!
  3. Freeze in a single layer until hardened.

For the coconut vanilla creme

  1. Blend all ingredients in a high-speed blender or food processor until coconut butter-like texture. You could add peppermint essential oil or other flavors if you want.
  2. When the cookie rounds are hardened in the freezer, layer coconut creme on half of the cookies and add the remaining cookies on top. Freeze while making the chocolate sauce.

For the dark chocolate

  1. Whisk together all ingredients.
  2. Dip cookies in chocolate sauce, place on a baking sheet and freeze until hardened.
